Mediterranean Relish

Prep.time ....30 min.
Cooking time Approx. 45 mins.
1 pint Sarsons's Pickling malt vinegar
2 Red Onions , sliced
1 lb tomatoes , peeled and chopped
1 Red Pepper, sliced
1 Green Pepper , sliced
1 Yellow Pepper , sliced
4 Large Courgettes ,sliced
3 Cloves Garlic, thinly sliced
4 oz. Sundried tomatoes in oil , finely chopped
2 Bay Leaves
1 lb Caster Sugar
1 teaspoon Salt
4 tablespoons Fresh Herbs such as Basil,Thyme,Parsley,chopped
2 Tablespoons Tomato Puree
Method
Place all the ingredients in a large saucepan and gently heat until the sugar has dissolved.
Gently boil, uncovered for about 45 minutes , stirring occasionally until the vegetables are soft and the sauce has thickened.
Spoon into warm sterilised jars, seal, label and store.
Can be used straight away
I made this in the autumn ,it's a good way of using up any Tomatoes and Peppers left over in the Greenhouse ... ... It's very tasty and goes well with cold meat , it's also very good as a pizza topping ....

It's very tasty and nice if you can use up your own veg . but you can just as easily buy the items when you see them on offer ...... :o)

Yum Amy....this looks delish! Ian likes making chutneys...we've just finished his tomato and onion one, so next one will be this.....thanks for sharing...:o)

Would this keep all winter, Amy, if made in Autumn? Not that ths would last very long in my house. :o)

I'm glad you like the sound of it everyone , it's so easy to make ....
It should keep well David because of the vinegar in it .. I have used one jar since Sept. and these other two still look in tip top condition ... .. if your children like a Pizza they would like this as a topping ... I have a very easy Pizza base recipe if you would like it ...

Many Thanks for that, Amy. I have all the ingredients above, just need to get toms and sundried ones. I always make my parents a homemade hamper for Xmas. they, too, love relishes/sauces/pickles, which is why I asked about "keeping" time. The children do like making our own pizzas from time to time, but have always just bought ready-made bases. I, for one, would welcome your recipe for pizza dough - something else to keep us warm in the kitchen. :-))

What a nice idea making your own hamper David , a greatly appreciated gift . my granddaughter has given us one and it's exciting to look through at all the delicious goodies ....
I will PM the Pizza base to you as it's not exactly something from the garden .. :o)
