Looks absolutly fit for a prince and princess Sticki. Lovley to see them getting married yesterday. The crowds behaved themselves and seemed to be having a good time together celebrating the grand occasion.

I've just developed a new obsession, Sticki...my cousin just gave me the recipe for Date'n'Nut Cake...made it last night....uh oh...who's gonna eat all this cake??? surely not ME??????

If you're sure you want it...! no prob.
DATE NUT CAKE
Preheat oven to 350
Grease a 9" sq. cake pan
In a sauce pan combine 1-1/2 cups chopped dates and 1 cup of water. Cook uncovered over med. heat 'til soft.
Let stand to cool.
Sift together 1-2/3 cups flour
1/2 tsp salt
2-1/2 tsps of baking powder
1/4 tsp baking soda

Cream together 1/2 cup butter and 1 cup of brown sugar
Blend in 2 eggs and a tsp. of vanilla...then beat until nice and fluffy...scraping down the sides of the bowl a couple of times to make sure it all is mixed well.

Stir the dry ingredients and softened dates into the creamed mixture ALTERNATELY with 2/3 cup of milk.

Add 1/2 cup chopped walnuts

Turn into prepared pan and bake 40 to 45 minutes or until cake springs back when lightly touched.
If using glass pans check after 35 minutes.
Frost with a sifting of icing sugar, or make up a cream cheese icing... bon apetit!

cream cheese icing sounds very nice ~ never put that on a fruit cake before [only on carrot cake]
im going to see my mum in devon tomorrow ~ she had a date and walnut cake recipe ~ it will be interesting to see how similar/different it is!!

all gone now!! but now im getting ready for sons wedding in two weeks time. they are having cup cakes for the main cake. but the church and reception are 20 miles apart so im making flapjack and shortbread to keep people going!!
