Jar of pickled lemons

Just need to wait a few weeks....then add to lamb dish or fish!

Take 1 pickling jar....enough lemons to fill it tightly. Cut each lemon in a cross shape but only to 1.5 cm from the bottom. Pack each lemon with 1 tbs of salt. Pack into jar and leave for at least a week.
Then.....push lemons in jar and top up with lemon juice, sprig of rosemary, star anise and top up with olive oil. Leave for about a month!!
I think you eat only the rind. It's yummy with lamb!

Sounds really good Lulu but I have to avoid the salt due to High B.P ... shame :o(
