Just before the purple flower fuzz appears. Probably too tough to eat now.

Mine are nowhere near flowering yet but this has reminded me to stake them before they get too heavy.
Last year stems couldn't take the weight. Do you stake yours Siris?

No Siris , just grown for and used in flower arrangements if a large focal flower required.Arm and leg in the flower market.

Are they Thorney. I think the ones with purple on them are the nicer. I have eaten them in France in the past, take forever to cook, take the calyx? off and pull between the teeth to get out a minuscule amount of flesh, but not much flesh on a snail either!
