A good start to the Christmas season.

It rained until 3 yesterday, so I baked 18 mince pies in the morning. Used the machine to throw it all in. I used 10 ounces butter (diced.), 20 ounces plain flour, flat tablespoon caster sugar, and about four tablespoons water, then blend and add a few drops more water if necessary, until the mixture blends together. You can put the pastry, covered with clingfilm, when patted down, into the fridge for half hour, but I don't bother. Roll out, and I use a small cutter and a larger one, then I grease the little spaces in the large flat tin with butter, put the larger circle of pastry in first, add a spoonful of mincemeat, then cover with the smaller circle of pastry. Cook for 25 - 30 minutes 190 degrees till pastry goes coloured. Some recipes say use half white fat, but I like butter.
You can reduce the amount of recipe ingredients, but as long as you use half the amount of fat to the amount of flour and reduce the sugar and water it'll be fine.

I’m full to the brim!!! This evening, and yesterday evening we just had a light snack for tea! This is the first year OH has actually ‘liked’ mince pies. They’ve all gone now..:-)
