My wife & I eat pineapple rings almost everyday - but tinned not fresh.

I'd love to see another photo where the flowerhead can be seen more develped - perhaps in another month?

It’s developing very well, but will take a while to ripen. I hope it’ll ripen by August! It appears to like the spot under the pygmy date palms in the front yard. It gets morning sun and didn’t even burn when it got up to 100 degrees (38 c) here about two weeks ago
