Meadow, I'm a few years behind you -1972- and I was a child bride by today's standards, on my 20th birthday. How foolish was that, only one set of presents.....

Happy Birthday to your son Meadowland. The pudding looks scrumptious.
When I do a sponge, I just use 4 eggs, 8ozs butter, 8ozs caster sugar, 8ozs SR flour, and a level teaspoon of baking powder. Cream butter and sugar, add eggs, flour and baking powder, .... mix eggs and flour in gradually. grease and line two 7 inch sponge tins and add mixture in. Bake for about half hour, middle of the oven about 190 degrees.
I test with a knife to make sure it comes out clean then it's cooked.

i use 6oz of the above but no extra baking powder also in 7inch tins. I listen to them and if they are not bubbling they are done. [gas mark 4 25-30 mins]
