Sambucus Syrup

Made from Elderberries , it,s brilliant for colds in the winter , I freeze it in ice cubes you can then take them out one at a time daily , thaw , and have a teaspoon at various times of the day , I have seen it in health stores for approx. £12.oo a bottle so it,s worth making it yourself

This is how I store Basil Pesto for winter use also, just take out a cube or two and stir into sauces.

That's really interesting Amy, I love natural remedies, raspberry syrup is a good one too.

I can tell you how I make it I did have a proper recipe ,but lost it almost at once ,this is how i,ve always done it , I think this is near enough .nothing in it really it,s pure juice .
Try to pick a bucket of nice ripe Elderberries , away from the roads if possible , Give them a good wash , take off the berries ,they come off fairly easy if they are ripe . put them in a very big pan with only the tinyest drop of water about a tablespoon , slowly bring to the heat so that the berries break down gently , gradually bring to the boil then let it simmer gently untill it starts to plop like syrup , press a little bit with a potato masher to help the juice out ,this will take about 40 mins you have to judge for yourself , let it cool , it,s a fantastic colour and stains everything it touches so beware .
Strain it through a strainer or sieve , then pour into ice cube trays , there it is done .

I'll have to have a go at this. Laura's always getting colds. I've only ever used elderberries for wine but that's a different story~~~~~~
