We have just picked our first ever onions, Can I use the green stocks at the top of them for making soup? did not want to try in case they were maybe poisonous

You can eat every part of an onion, including the flowers and seeds if you like. After all, spring onions where you eat mainly the green part, and chives, are simply the green leaves. Should make excellent soup especially while the green leaves are fresh and young. Later they become hard and turn yellow and aren't so good.
