Working on the assumption that you're referring to 'Cox's Orange Pippin, here in England they are well on their way to ripening. As I'm not too familiar with your climate, although I'd like to be, I should imagine you have lots of sunshine and your fruit should be ripe by early fall. You can test for readiness by cupping a fruit in your hand and twisting gently. If it comes away easily and cleanly, It's ready.
