Toffee Apple Cake

*Just a recipe for anyone who has spare eating apples. It’s delicious eaten cold and filled with whipped cream as in picture. Alternatively the two halves of the cake can be sliced when still warm and served as a ‘upside down’ pudding with pouring cream or custard.
TOFFEE APPLE CAKE
Cake:
2 Peeled eating apples
4 tablespoons soft brown sugar (either dark or light)
6ozs (175g) butter or margarine
6ozs (175g) caster sugar
3 medium eggs
6oza (175g) SR flour
Filling:
Quarter pint of double cream
2 tablespoons icing sugar
Half teaspoon vanilla extract
Half teaspoon ground cinnamon
Preheat oven to 180C, Gas 4.
Line two 8inch sandwich tins with baking parchment
•Slice apples thinly and toss in the brown sugar until well coated. Arrange in base of both prepared tins. Sprinkle any sugar left in bowl over the apples.
•In a separate bowl cream butter or margarine and caster sugar until soft and fluffy
•Beat eggs and gradually add into the mixture
•Finally, gradually sift flour into the mixture and fold in well
•Divide the mixture between the two cake tins, covering the apple/sugar layer
•Bake for 25-30 minutes until golden and risen. Leave in tins to cool.
When cakes are completely cold:
•Whip double cream with 1 tablespoon of the icing sugar and vanilla extract
•Sandwich cakes together with the cream
•Sieve remaining icing sugar and cinnamon over the top of the cake
The second time I made this cake I just bunged all the sponge cake ingredients into a bowl and mixed well. It didn’t seem to taste any different! For a more cinnamony taste I added some extra cinnamon to the whipped cream too. Using soft dark brown sugar or mustovado sugar gives a more pronounced toffee flavour.

I need eggs too.....got the apples in the freezer. Looks delicious, Gee. My family aren't keen on whipped cream but I think they'd like custard or ice cream with the apple cake :) Will have to give it a try.

another one for my favorites--- being on Goy gives me ideas what to do with the fruit rather than the usual--- may pass on the cream though or just pour over-- it does look gorgeous & gooey tho.........

I might try this Gee, sounds absolutely scrumptious. I have loads of eating apples this year ,none last year. Not good for my various medical conditions but one layer with light squirty cream won't do me any harm surely?I think it might cheer up GJ a bit if I served this up to him. I wonder if it would work with Agave syrup which is low GI?

OH for the days when we slurped up the whipped cream and sweet desserts always followed a big meal...mind you more physical effort went into our everyday chores than we expend today with vacuums and carpet cleaners and power washers!! Wonder how long I'd have to work at weeding to burn off one of these luscious looking cakes?... I should try it anyway. Love apples and sponge cake...Thanks for the recipe, G19! I think you would need to add more sugar if you are using cooking apples, BB, but worth a try :)
A good long walk should work off a slice, Lori! My little lovebird is doing well and keeps herself busy shredding paper and decorating her cage with it. She was completely unaffected by the arrival of Millie, a lurcher/whippet cross and gets very excited when Millie plays with her toys and throws them around the room.

LoL...sounds like between the two of them your days are full of activity!! I lost my little Yoshi...I was away visiting family and Yoshi was an escape artist...Terry had the door to the deck open and was replacing the water and food trays in his cage...Yosh squeezed out thro the food door at the bottom and was out singing in the trees in the back yard. Hubby wasn't able to entice him back indoors. Canvassed the neighbourhood and left cards at all the pet stores...but we never got him back.

What a shame, Lori, you must both have been very upset. I think Poppy would escape if I wasn't very careful as she always goes down to the gap when I am changing food and water. I clip a small drinks coaster over the hole while I'm doing it now.

I was heartsick when the days were going by and no sign of him...I usually covered his cage while I was working with his food and water...he would go into his nest/pouch only to emerge saucy and ready to squawk when water was run ..or sing along with the radio! I miss him.
I've seen sites on the inet about the problem that escaped lovebirds have created in the south west United States...they nest in the tops of palm trees and in the cacti that the small owls usually nest in... they are a bit of an ecological problem it seems... One lady found babies on the ground after a row of palms were cut down...she wrote a blog about how she had gathered any which didn't appear seriously injured and hand raised them.
Apparently they are very prone to escaping...(so much for loyalty aye?) lol... A mated pair are very much all about themselves and no humans need try to intervene!

At least your recipe made me look closely at the Agave syrup squeezy bottle again and it said 'suitable for baking'. It is low GI which is surprising for a sugary product and comes from the agave plant. I did do a couple of upside down thingies with Cherry tomatoes and eating apples and puff pastry. I chose one of those rainy days when I can't do gardening.

Made it, tasted it, loved it today. Great recipe...I'll have to give some of it away as hubby doesn't eat sweets or cream. Crazy eh? lol Amy...you'll really enjoy it....it is a surprisingly light cake as well.

It should freeze OK, Bloomer, probably best before adding the cream. Cinderella said she was freezing one she made :)
