my reason for asking if I am harvesting too soon is that I feel that the fruit is more bitter than it should be, therefore I wondered if I left it say another couple of weeks whether it would improve the flavour

I think the birds might get to them if you leave them too long! You will have to taste them at intervals and see when you think they are ready, I think.
