Does anyone know whether deer are partial to hyacinths? I've planted some in tubs and I'm worried that the deer will eat the flowers.

Deer will eat hyacinths....they'll eat anything. Even plants they aren't supposed to like. My lilies got eaten last year and deer aren't supposed to like them.
