I wouldn't go for anything less than 2 foot deep

i use old compost bags.rolled down to start with and rolled up abit each time i earth up.its cheaper that way.

Champers if you have space you will get a better crop in the ground.

You can grow potatoes in a bucket, however the bigger the container the more potatoes you'll get.
What you need to think about is earthing up the crop so that the potatoes don't go green
