The dried seeds can also be used in curries and, obviously, to grow further plants.

Coriander is the ground seed of the plant, and it develops seeds after flowering, if you are using the leaves (called Cilantro) these leaves will begin to fade and die as the plant sets seeds. So I try to remove the flowers as soon as they appear and use up as much of the leaves as soon as possible. They are perfectly safe to use.
