I would like to prune my Pittosporum, Escallonia and Euonymus: would this be a good time?

Be comforted, Spritz! That's what we do for Pittosporum and Euonymus, here. Sadly, Escallonia doesn't grow here.

Once again, just too blazing hot in the summer! Sometimes I want to move to northern Arizona or Colorado for more reasonable summers, then our balmy fall and winter starts, and I think..."Naahh!!" : )

I have to admit that as one of the chilliest mortals, I simply don't like it when the temperatures start to drop, so I wouldn't object to living in Arizona! :-))))

My mother was never warm, until she moved from western Pennsylvania to here in the Valley of the Sun. Beware, though--Belmont, in northern Arizona, often takes the title for lowest night temperature in the continental U.S.A.!

I wouldn't prune a Pittosporum now - leave that until spring. Then you can give it a haircut, or a slightly heavier prune if necessary.
I'd also leave the others until next spring, too. My concern is that pruning tends to encourage new growth, and if you get a sharp frost, that would damage the new leaves.
