Here's a partial list, Bob:
Asparagus.
Rhubarb.
Artichoke & Cardoon--probably perennial only in the mildest coastal areas of the UK.
Jerusalem "Artichoke"--needs a hot, sunny exposure, but may become invasive there.
Leaf Chicory, some kinds.
Domestic Dandelion.
Watercress.
Garlic, some forms.
Hardy Bamboo Shoots (Phyllostachys edulis)--probably will be hard to find, and hard to contain!
Sea Kale (Crambe maritima)
There are others, but they are mostly tropical, and couldn't be called a perennial in the UK.

You could try spinach. I grew some from seed and they came back several times. They didn't even mind being transplanted. Sea kale is still popping up in my current garden, even though no-one lived there for many years. Both had withstood some pretty harsh winters.

There is a very nice broccoli called 'Nine-star perennial' although not always easy to find the seed.

« My leeks are very skinny, and have pointy tops are they ready to harvest?
Vegetables are not perennials Bob they grow and produce a crop in the same year or, occasionally the next year. I do not kow of any perennial vegetable crop.
