Just keep ridging them up for a while yet.

Last year I grew some in ridges and I covered the soil in thick black plastic (cut up compost bags) that kept the root dark and the moisture in.

A follow up ? please. Should you let the sprouts get very big before covering or cover as soon as you see them push up thru the soil. I am trying 2 exotic colored potatoes and have never grown a potato in my life. I got the impression that you should allow them 6 inches or so before topping up. ?? Sorry to horn in on your ?, but it was exactly my own too! : )

No problem Wohlibuli, I was wondering the same thing myself as the green shots are only about an inch high!!!

You should cover them when the shoots emerge from the surface, but definitley if they reach a couple of inches.

oh and I would not recommend covering the ridges in black plastic - you need to get air and water to the growing potatoes

Assuming you have them in soil or a bucket or something and they're not just sprouting in your veg basket, lol.
Yes, cover them up with a couple of inches and each time you see growth cover them again until you reach the top of the pot or a good high pile in soil.
When the leaves have developed feed with a high potash fert' to increase yield.
Plenty of moisture needed around flowering time as that's when the tubers are forming.
