Beetroot, but not gardening !

I've grown too much beetroot, but if I pickle it ( which I always do ) how long will it last ?
Must I pass more than usual on to my friends ?

Apparently it lasts around 3 to 4 month before the taste goes sour because of the vinegar it absorbs. you could try other recipes with it, you can try roasting them whole and eating like a root veg - no idea how that tastes though :D

Roast beetroot is wonderful. There are thousands of beetroot recipes if you look them up, not just good old pickled.

I pickled some last year and to be honest it was so good it didn't last that long. Used Delia Smith recipe and it was wonderful.

We cook them and freeze them, ready for use until the next seasons crop.

Thanks. Will try roasting them but not convinced it'll be good.
Must take 2or3 jars for my 94 yr old uncle in Worksop tomorrow.

It's delicious roasted but also if not too big I really like it grated raw as part of a salad. And have you thought of soup?

Nigel Slater recommends roasting golf ball sized beetroot wrapped in foil. They are very nice - a bit earthy, perhaps?! Good with other veg, though - I like them more than I expected to!

Try roasting them in the same pan as butternut squash and a couple of crushed garlic cloves. Add cashew nuts near the end of cooking as well if you like them. I don't care much for beetroot normally and was surprised how nice these were.

I make a few chocolate beetroot cakes, especially as I can't stand beetroot. But the taste is lost in the cake, but they are ever so moist and they go down well with friends too.

I'm just spoilt for choice. Yesterday I was looking for recipes and found one for roasted balsamic beetroot which looked good as I've just bought a bottle of balsamic and haven't a clue what to do with it !

Recipe please 2ndHand! Hank try your vinegar in French dressing instead of your usual one.

225g s/r flour, 70g cocoa, 200g sugar, 150ml sunflower oil, 300g cooked beetroot. 3 lg eggs, 50ml milk.
blitz or blend oil, eggs milk beetroot, mix with dry ingrdients. Place into a lined or loose bottom deep cake tin 8" wide. Cook in oven 180 deg for about 40mins.
To ice, small knob butter, 20 ml milk or cream. 50g white chocolate, icing sugar. Melt chocolate, cream and butter, add icing sugar until thick enough to spread / pour over cake.
Really yummy and moist. Keeps well for a few days if allowed to last long enough.
