I always used to leave them until spring time, when I made autumn sewings of Sweet Peas.
Then nip the tops in about Feb/March. This will make them produce lots of side shoots, and give you loads of flowers :o)
Good Luck !
Don't worry about them not climbing. The side shoots won't have any difficulty doing it :o)

Don't pinch out until mid February at the earliest.
Grow them over winter as cold as possible. A cold frame is ideal, left open at all times unless the temperature gets down to about -5' c when you close it up.
That will stop them getting to leggy.
If temperatures lower than -5 are predicted for long periods I bring mine into the greenhouse.
