From bush to bottle

Redcurrants always do well in my garden and this year is no exception..
I was given this traditional English recipe in, believe or not, Berlin by a friend there, she uses it on her Christmas dinner.
Its Cumberland Sauce and it puts redcurrants with oranges and lemons and some delicious port.
start by selecting an worthy assistant and then picking a good couple of pound of redcurrants..
after scrubbing 4 oranges and 2 lemons cut of the rind and of both and cut into tiny matchstick pieces, discard the pith and cover with water and boil..
simmer for a couple of minutes then drain and cover again with water and boil again then repeat the simmer..
juice the oranges and lemons and add to the pan along with your redcurrants and a glug of port..
then a bit more port lol..
slowly to the boil and simmer for 10 minutes, add about 4 tablespoons of cornflour and a pinch of ground ginger and a little bit more port and cook slow until it thickens..
leave to cool before pouring in a bottle..finish your wine or the port..

Will try to remember this one for next year. i gave a lot of mine to a friend who wanted to make jelly - but she did give me some and very good it was too.
