Bernieh Very kindly sent me a recipe for Lamingtons so I could make them for a homesick Aussie…… I’m pleased to report they were a big hit this is the second batch!! GoY not only a website for gardeners but a special place to make good friends.

Hywel ~ it’s so nice to know that with a click of a few buttons we can find so many nice people, the worlds not such a bad place after all. On a good day we shear a joke and have a laugh while sharing a common interest and on a bad day theirs always some one to turn the darkest day around and make us smile. :0)x

Oh I am very impressed ... you've done all Aussies proud! They're such a popular treat down here, a bit fiddly to make but worth it in the end.
Just as a bit of background to this fabulous treat:
This Australian culinary icon, which consists of sponge cake dipped in chocolate and liberally sprinkled with fine desiccated coconut, is believed to have been created through an accident at work by a maid-servant to Lord Lamington, the thoroughly-British eighth Governor of Queensland.
The maid-servant was working at Government House in Brisbane, when she accidentally dropped the Governor's favourite sponge cake into some melted chocolate. Lord Lamington was not a person of wasteful habits and suggested that it be dipped in coconut to cover the chocolate to avoid messy fingers. Lord Lamington devoured this new taste sensation with great delight and the maid-servant's error was proclaimed a magnificent success by all!
Well that's one of the stories anyway .... lamingtons are also sometimes cut in half with one half being covered with strawberry jam and some cream and then the other half placed back on top ... also very nice!

My husband thinks that jam and cream is an excellent idea guess I’ll be buying extra cream this weekend! ;0)
