Spicey Cranberry Sauce anyone?

Hi folks, just getting all my ingredients ready to make my cranberry sauce, it is so easy to make and takes only about half an hour in all. I tend to make it in small batches, ie. one 250g. bag of cranberries, then bottle it for gifts to friends and family, it is especially delicious served of course with Turkey but just as tasty with a cheese board or pork pie. Have a go it is so much nicer than the ready bought stuff which is too sweet.
Here goes :
1 bag of cranberries about 250g
enough brown sugar to your taste
The zest of one lemon & one orange
The juice of the orange and/or lemon after zesting
5-6 cloves depending on your taste, I love them, some folk don’t.
1 cinnamon stick
Grated nutmeg, again as much as you like
Now for the best bit, a good slug of Port to just cover cranberries.

Bring all the ingredients to boil, then simmer for approx. 12-15 minutes, this should form a nice thick sauce quite quickly, which can then be bottled/jar. Don’t forget to remove the cinnamon stick and/or the cloves as well. I use those nice kilner jars and they make a lovely pressie.

Ps. this keeps very well in the fridge for a few weeks.

I'm with you on this one, Grandmage, can't beat home made cranberry sauce, nothing like that shop stuff, which is more like jam really. I'm not keen on cloves, unfortunately, but might try your recipe - have one of my own I do every year, just cranberries, bit of water, sugar and, like you, a jolly good slug of port, cook till berries burst. Last year I had some left over, but not enough to go with the pork I was cooking, so I added some cooking apples and plums - I have to say, if anything, it was even more delicious than my regular cranberry sauce...

sounds great grandmage, i think i can smell it now! i agree home made is best and now karensusan tells me that i can grow cranberries in my garden ~ so maybe next year ~ homegrown and home made!!

I also make my own. I'll try your recipe and Im sure it will be even better than usual! Gone to faves! p.s. I use Cointreau which adds another orangey dimension, instead of Port.

Hmm, cointreau, now there's a thought - trouble is, I end up using whatever it is I've got, and all I've got is ginger wine and port!

I don't like alcohol really - ginger wine's great, baileys, Pimms, but I hate the taste of all the rest of it, worse than cough medicine, especially gin and whisky.

Sounds lovely! If you like cointreau try this: the next time you fancy making fruit loaf, soak the fruit in cointreau and the juice of a freshly squeezed lime. Grate the skin of the lime and add to the mixture. It sounds like a strange mixture, but when I had a slice of date cake someone had made, most of the rest of the cake disappeared rather quickly!

Some great ideas on here folks, like the sound of cointreau Ks. might use both!, I would say though if using Cointreau then use less sugar so its not too sweet.
Bamboo, just leave out the cloves, I know loads of people who just don't like them. Also I dont drink any alchohol at all but I like it in recipes, suppose its not so strong that way. Amaretto is one of my faves in coffee!. Sticki this is such an easy recipe but so tasty and nice with the cold meats and leftovers. The thing about this recipe Cristina is that you can add or take out the bits you dont like but leave the port in, its just makes it.

It sounds fantastic GM.....I'll be trying it. I never thought to have cranberry sauce with pork pie.....That's something I'll have to try next time I'm lucky enough to get some pork pie.
I like Cream Amaretto in Earl Grey tea....Called a 'London Fog'. And Godiva liqueur in Hot Chocolate. Yummmm

Thanks for the recipe - I make my own sauce too but usually just cook the cranberries with some freshly squeezed orange juice, orange zest and a drop of other pure orange juice if needed.

Have you tried it on ice cream - I always make extra so that I have enough for this.

I will definately try your recipe too this year.

Hi Gilli, we always have pork pie and salad etc. on the christmas tea table so its one way of using up the sauce, delicious, also amaretto in tea!!!! hmmmm.nice.
Hi Mariek just add a little port to your recipe with less orange juice, sounds good, as I said its an easy recipe to adapt, and on ice cream! lovely. Have you tried Soya vanilla ice cream it is so yummy, our grandson has to have it due to an allergy and we all like it better than the full milk version! + cranberry sauce, bingo, a nice light sweet.

I tell you what else cranberry sauce is great with - toasted goat's cheese, you know those little round ones, forgotten what they're called, quite soft - you stick them under the grill on a piece of foil till they're brown on top and oozing, get ready some ciabatta (preferably) toast or ordinary toast on a plate, surround with salad leaves, stick the grilled cheese on the toast, drizzle (or dollop, more usually) liberal amounts of cranberry sauce over, makes a really great light snack or lunch.

its very easy to make your own pork pie, i have made one with sausagemeat and chicken but i have a new one which seems to go down well ~ spicy chicken pie which has spicy peach chutney in it!

Mmmmmmmmmm, my mouth is watering!! Bamboo I have grown allergic to goats cheese, but I could use camembert instead couldn't I ? Sticki think that's a recipe you should put on a blog!

Yes, I'd imagine that would be a good substitute - how odd though, I can't eat a lot of cheeses now, specially blues, but I can still eat goat's cheese - occasionally!

I wondered if it was too strong for me although I love Stilton and St. Agur etc. so do not know why!! My fave is cambouzola (not sure of spelling) its yummy, a mix of camembert & gorgonzola.

Oh, cambazola, was one of my favourites, along with dolcelatte and blue stilton - can't eat 'em any more, allergic to blue cheeses now, woe is me... I dunno, bad enough getting old without having to give up foods I've loved as well...

Brie and cranberry sauce baked in a nice flaky pastry is wonderful.
I had to switch to goat milk and cheeses when I was nursing my son. He reacted to the cow's milk and products in my diet. He is fine with cow's milk now. I guess he outgrew the allergy.

Hi Gilli,it's strange isn't it that so many young ones get an allergy to cows milk, we didnt realise that it was what my daughter was eating that made her son poorly, however he is fine with soya products now and he can have certain things as long as we read the label.
Camillia, hopefully only another week now before I can put photos on again. Enjoy your cranberries.

The doctor told me that milk allergies are common but it's one of the allergies that babies usually grow out of GM. I hope your Grandson does. My son was always fine if the milk was cooked as in baking etc. He also was fine with Yogurt and cheese. Now he's 20 years old and anything goes.
He was also allergic to eggs but the same thing with that...he outgrew it. His allergy to peanuts however, is still there.

Funny you should say that Gilli, Dylan is only 3 at mo. so my daughter has started giving him little doses of things with milk in every now and then and he has been alright. He cannot tolerate yog.or cheese or milk chocolate though, but he is young yet. As you say fingers crossed he might grown out of it. When we bake cakes we leave the milk out and use juice instead.

Always make my own, using almost identical recipe, and use either sherry, whisky, or port (most of the taste disappears in the simmering, but adding just an extra "swig" leaves a hint of taste, so not too alcoholic. Hic! Nothing like it in the stores.

Does putting your cranberry sauce into a kilner jar mean it will keep until Christmas, if you make it now... a bit like jam? All the recipes I have looked at say it will last three days in the fridge. I bought a kilner jar in Ikea with my cranberry sauce in mind.

I think it will keep for a good month or maybe even more, with all that sugar and booze in it it's bound too!!!! Linda I put it in Kilner jars for gifts only, with my own it goes into any container and I cover it in cling film til I use it!

Paul it is meant to go with the turkey really, but if you can get fresh cranberries still, then try it with cold meats etc. Hope you enjoy, ours was delicious.

Kidney stones is like the pain of appendicitis - it is especially bad because it is intense cramps that do not go off at all

Paul - highest content of cranberries is in Ocean Spray Long life Cranberry juice, believe it or not.
But a note of caution, people - if you're on anti coagulant treatments such as warfarin or heparin, do not take more than one very small glass, or a dessertspoonful, of cranberries daily - it thins the blood, and in some people, can cause haemorrhaging if you're on any of those drugs.
