All of these are blossoms taken from my hydrangeas this Fall. I must've picked them at the right time because they have held their color nicely.

That's a nice one, I was impressed with the flowers when that variety was first introduced. I'm not a huge fan of Hydrangea paniculata but Pinky Winky and Vanilla Fraise are both nice. There are now a lot of dwarf varieties out that don't flop over as bad as the larger ones.

Pinky Winky is large and have just few flowers, this sort looks like it has more flowers, but maybe it is only advertisement. Do I have to fix it somehow?

Both of them will become large shrubs, not sure if one produces more flowers than the other. I've never seen a large Vanilla-fraise (had never seen one at all until 2 years ago) but Pinky Winky seems like it has stronger stems. Any time I see Vanilla-fraise flowering a lot of stems are weighed down but that's true with most H. paniculata. The only fixing you might want to do is if it gets large and sprawls everywhere. I cut them back every year (most hydrangeas I leave alone when I can) but they do fine without being cut too.

Each spring I cut H. panniculata to 30 cm above the ground. It becomes thicker shrub each year by this intervention and - it is said that - it has also more flowers then, but this latter relationship I did not notice, to be honest.
