I like to slice them add them to beef stew, make Italian heroe sandwiches with sausage & peppers, stir fry, stuffed peppers. What about you? I also have a huge bag of them in the freezer.

I use my frozen sliced ones in stews Paul I also make a Ratatouille to freeze as a winter veg it makes a good Pizza topping as well , I love red Peppers stuffed and baked sometimes with rice or fried tomato & onion with an anchovy on top ... ..they are so versatile I don't know what we would do without them ..

Such a versatile vegetable aren't they? They are great on pizza. I've even added them sliced to baked beans with cherry tomatoes also from my garden -

You are all making me hungry...the photo is very appealing to the taste buds.

LOL Mine too Wells. I'll just have to plant double next season. Technically, they ripen to a "stop light" red and become sweeter, but I don't have patience to wait. They are fine green.
