Sourdough update!!

Treated ourselves to a new casserole one that can be used on induction and then put in the oven, taking temps of 260 c....this is my best loaf to date, the banneton was too large, so changed to a smaller one, baked in a cold oven, dough straight from the fridge, in a Procook dutch oven, I think I have finally cracked it, now for some experiments!! got there in the end!

Looks lovely, can't imagine how one can bake in a cold oven though. Perhaps the dough can be put into a cold oven before it's heated up?

Feverfew the dough goes into the oven straight from the fridge after it has been scored, and put in the Dutch oven then the oven is set at 240c......

Thanks ladies for your encouragement, now I am experimenting with spelt flour!! and seeds, so far, successful!

linda it was alright, but not as good a result as I wanted!! apparently spelt can be tricky!
