I love them too, nearly as much as the bees:-)
I have eryngium varifolium which also has patterned foliage like this.

We do grow several different thistles,Miss Wilmotts Ghost is our favourite.

Oooh I love that one too,amazing foliage, don't know where mines gone this year, no doubt there'll be lots of seedlings, does it die after it flowers DD ? because mine flowered last year, thought it was perennial but maybe not.
