On honeymoon recently in borneo, we saw this plant everywhere. What is it? And how would it grow in the UK?

It looks to me like a cordyline terminalis, also known as the Ti plant. There are various different hybrids and most of the pictures you see of them have leaves coming off the stem.
If this is the correct plant, it is strictly a houseplant only in the UK as it is tropical. I'm sure you can buy them in some garden centres, or possibly online, although they are likely to be available in much smaller sizes than those you have photographed. I had one a long time ago which fell victim to red spider mites after some years, and I have seen them for sale since in places such as Homebase in the houseplant section.
