Beetroot Soup

I have just lifted the last of my crop of beetroot and have had an abundance of beets this year, so I’m making beetroot soup to put in the freezer for winter.Its really tasty as well as being good for you. I thought I would put the recipe on here for my goy friends.

Beetroot soup:

2oz’s margarine
2 large onions , chopped
1-2 carrots
2 celery sticks (optional)
1Ib 2 oz’s cooked beetroot
1-2 tbsp’s lemon juice
One and a half pints of veg. stock
half a pint of milk
salt & pepper

Melt marg. in large pan
Add chopped onions and carrots and slowly fry until beginning to change colour
Then add beetroot plus lemon juice and stock and seasoning
Bring to boil and then cover and simmer for 30 mins. until tender.
Cool slightly and blend.
Pour into clean pan and add milk.Bring back to boil.
If wanted top with grated beet and a swirl of cream.

N.B. If you want to freeze this, I use cartons like the small cart d’or boxes or something similar.I divide into 3 portions which will make a serving for 2 in each carton, but you mustn’t put the milk in until you are serving it up. Enjoy!


I forgot to say, make sure the cooked beetroot is chopped well.

My that was quick you two.I forgot to say that I make this every year usually in October (bit late this year due to milder weather keeping the beets growing well) and we are usually still eating some in the early spring.When I serve this up for hubby, Stickie , I have to make sure there are only mats or washdown tablecloths as you can bet your life , how careful you are , some always seems to get spilt!

my mum once cooked the beetroot in a pressure cooker but something went wrong and it exploded all over the ceiling!!!

Oh yum, Rose! I must try this one, it sounds lovely! I'll bet it's nice with some soured cream too, oh, and some crunchy croutons or Melba toast, and a teeny sprinkling of cheese...and, watch the diet fly right out the window! Lol!

I forgot to tell you all about my first experience of doing soup so I hope you all get to read this, especially you Stickie. I used to blend soup in a food processer where you hold the lid on. Hubby and his friend were sat talking on a bench outside the kitchen window and I.without thinking took my hand off too soon and all you could see was flying soup , me screaming and those two laughing!

as soon as you said food processor i knew what was coming!!! oh no!! i have a red kitchen but you must have had a red all over kitchen that day!!!

No, I haven't, Sticki. There's a thought. My Dad only ever ate it slice and soused in malt vinegar, which I loathed, and I think I'm just associating it with that. I shall give it a try.

At least you like this soup Elizabeth and yes it is nice with cream.I did forgive them in the end Stickie and no,they didn't help clear it up.Hubbies friend, when he laughed , he could never stop.That day inspite of the soup, was a good day as there sadly weren't many days like that for Brian, hubbies friend as he suffered a major stroke and to this day , is still in a home. Its so sad as he was always laughing.Its lovely roasted and also just eaten hot as a veg.we don't like it pickled. You should try it Gattina. You might get a pleasant surprise.
I only ever tried using a pressure cooker once Stickie and it scared me to death.

i think you can cook beetroot as a veg but serve with white sauce.

I had some white beetroot this year - tastes just the same but doesn't stain everything red.

This recipe will really come in handy for me. My beets are going "bonkers" this year. I also have carrots growing along side my beets so this soup will be even more delicious. Added to my favorites...can't wait to make this soup. Thanks!
