Recipe for Easy Peasy Lemonade Scones

As requested, here’s my recipe for the lightest, fluffiest scone ever. Make a double batch as they tend to get snatched up very quickly.
Lemonade Scones
·300g (2 cups) self-raising flour, sifted
·55g (1/4 cup) caster sugar
·125ml (1/2 cup) thick cream
·125ml (1/2 cup) lemonade
·40ml (2 tbs) milk
Method
Step 1.
Preheat the oven to 220°C. Lightly grease a baking tray.
Step 2.
Place the flour, sugar and 1/2 teaspoon salt in a large bowl. Add the cream and lemonade and mix to form a soft dough.
Step 3. Turn out onto a lightly floured workbench and knead lightly until combined. Press the dough with your hands to a thickness of about 2cm. Use a 6cm round cutter to cut out 8 scones, place on baking tray and brush the tops with some milk.
Step 4. Bake for 10-15 minutes until lightly browned.

Cheers Bernieh..they look lovely..We don't have lemonde much either,so a small can will be ideal..do you ever add sultanas to yours,or are they better just plain ?

Pamg, yes it's the bubbles in the lemonade that makes this recipe work so well. The thick cream helps too!!

Bloomer, I've never added anything to them. I just slather them with lovely jam and a dollop of cream. I've tried all sorts of jams and they all suit perfectly.

Sandra, I'm only too glad to help with the dwindling sales figures for lemonade. Of course, those who make their own home-made lemonade will in no way contribute to the sales.

i think they might be with me too! i wondered about doing yoghurt instead of the cream for a diet version?? would that work?

Not sure, Sticki, but it's worth a try. Light cream cheese might work as well.

They sound yummy Bernieh, adding to favourites so I can give them a go when I get some cream, who'dve thought you could use lemonade in scones!!!!

beautiful and light, thanks bernieh, incredibly light! i made them with stewed blueberries ~ blueberry cobbler. the only thing that i would say about the yoghurt [plain] was it seems to have made the scones fairly soft ~ no crisp edge?

Adding stewed blueberries sounds delicious, Sticki. It seems that adding yoghurt works fairly well though. Thanks for letting us know how yours went.

I made my first batch this afternoon Bernieh and just had one for my tea, they're delicious,thanks for the recipe can see the way they're going they'll be a favourite here too :-)
The blueberry variation sounds nice Sticki I'll be trying that next :-)
