In other species, e.g. humans, babies start pink and go grey with age..Lol.

They get their colour from the shrimp they eat, right? (so the zoo must raise shrimp, aye?) you're so lucky to be so close to one of the best zoos in the world,D1.

Yes, it's the beta-Carotene in the shrimp and fish which gives them their color.
I do feel very fortunate to live only about 10 minutes drive from the San Diego Zoo.
However, I don't like seeing animals in captivity so much. I go the zoo to see the trees and plants. The San Diego Zoo is a World-Class botanical garden also. It has one of the largest exotic Ficus collections in the U.S. and the second largest cycad collection in North America. Also, it probably contains the largest collection of tropical, subtropical plants in California.
