For Helen and San, Yorkshire Parkin Recipe.

1/2 lb medium oatmeal
1/4 lb self raisin flour
pinch salt
7oz golden syrup
1oz plus 1 teaspoon black treacle.
1/4lb margarine
1/4lb soft brown sugar
2 teaspoons ground ginger
1 lge egg beaten
1 tablespoon milk,

pre heat oven gas mark 1 electric 140, fan oven 130

one tin lightly greased.
Add the syrup treacle margarine and sugar in a heavy saucepan and heat gently over a low heat until the margarine has melted, don't leave it or it might burn, don't let it boil, meanwhile measure the oatmeal, flour and ginger into a mixing bowl, add a pinch of salt, then gradually stir in the warmed syrup mixture until the mixture is all thoroughly blended, Next add the egg, lastly the milk, now pour the mixture into the prepared tin and bake for 1 and 3/4 hours to 2 hours, let the parkin cool for half hour before turning out, it needs putting in an airtight container for at least a week,

I forgot to say that my OH used two yogurt pots for the treacle and syrup, he put them on the scales first to make it easier.

well I hope it turns out o.k. for you who make it, I am a dab hand if I may so so at cooking and baking but Parkin is one thing I cannot get right, used my Mother in laws recipe which was full proof, it was still a flop, so I just gave up trying to master it, not tried making it for years now. so good luck all.

What is a fan oven Yorkshire? Would it be what we call a convection oven I wonder? And I am assuming that the 140 and 130 are degrees celsius? My oven is in Farenheit so I'll hve to convert.

Hi Gilli, my husband said that 140 degrees celcius = 275 Farenheit, and yes a fan oven is a convection oven, hope this helps,

my wall double oven has a conventional oven at the top and a fan oven at the bottom , I always still have to stop to think about the temp . the Parkin is safely tucked up in the top Conventional one and smelling gorgeous ,I can't wait to see what it turns out like .. :-)

Just bog standard plant pots I expect. LOL. Now..... as far as bread goes I cheat and use the Wrights bread mixes and they come out super,,,,,,,they do a range of different loaves as well. They also do a ginger cake mix that I add stem ginger to and a fudge chocolate cake mix that is very tasty and I am going to have a go at Christmas at turning into a black forest gateau by slicing it adding some whipped double cream with a dash of brandy and adding some morello cherries. I do have a go at making cakes from recipes and will be making a Christmas cake next week. I used to make a Christmas pudding but I usually get one from the shops now.

Oooo....that reminds me Linda, thank you. I will have to go and find a tiny little Christmas pud for my Dad. He loves it with custard. I won't attempt trying to make one....something I've never been successful with. :o(
