I've eaten them and I'm still alive :p
My parents have grown shiitake for ages and they bought me some 500 plug spawn back in 2011 therefore no danger!

So you have to have spores , and then put them on old wood ?
How do you get hold of them ?

You can buy shiitake culture in a form of a plug/pellet which you introduce to the wood by drilling a hole.
