I would like to pickle some beetroot as my husband and I have an abundance of it, but for it to taste like you get in sainsburys in sweet vinegar, has anyone ever done this before and if so could I please have the recipe, thank you very much,

I use brown malt vinegar, to which I add sugar and whole cloves, and heat up.
This won't give you the sweetness you want, but I like it and seems to retain the "earthy" taste of homegrown beetroot. As Cammomile says, hundreds of recipes just a click away on Google search - enjoy!
