Hi Mazzie: Herewith Green Tomato Chutney recipe:
2.5 lbs green tomatoes and apples
2 lbs onions, 1 lb seedless raisins, 6 crushed cloves garlic, half teaspoon cayenne pepper and salt, 2 dessertspoons ground ginger, lb 6 ozs soft brown or demarara sugar, 1oz pickling spice, 3 pints malt vinegar.
Peel and core apples, chop finely with tomatoes and onions and place in large pan with garlic, cayenne, salt, ginger and sugar and blend thoroughly. Tie pickling spice in piece of muslin and attach to handle of pan so it hangs down into ingredients.
Add vinegar, bring to simmering point, remove any surface scum and simmer for 3.5 hours without covering, stirring occasionally, until vinegar is absorbed and mixture has thickened.
Pour into hot jars, cover with wax disc and seal immediately. Enjoy!

Hi Cat50, I've been told by quite a few, to pick said toms and put them in a paper bag or a box, with a very ripe banana or apple and the ethylene gas given off will encourage them to ripen.I'll be trying the same thing later on today.
