Espalier apple tree - pruning tips please

I've got an espalier apple tree - it's two years old and the main upright stem is about four foot high. From the sides there are four main branches each about three feet long, forming the pattern quarter past nine and ten past ten (if you see what I mean!). These branches are supported on wire. I've got a lot of upright shoots coming up vertically from these branches (some shoots are about a foot long) and a lot of shoots starting to come out from the main stem. Do I prune these? If so, when?
