Paul's Lemonade

I thought I’d share my recipe for cool refreshing lemonade. It’s very simple & straight forward, but very good. The measurements are ‘to taste’ so you can make it to your liking.
Fill an empty glass pitcher with ice cubes, put into freezer.
Lemons, Sugar, Ice Cubes, Water, Mint
Take a few sprigs of fresh mint if you are fortunate to have some growing out back. This is optional, but pairs up nicely with lemons.
Make a Simple Syrup
Bring 1 cup of sugar & about 2 tablespoons of water to a rolling boil. To this, add a few shavings of lemon zest (just the outer bright yellow part of the lemon, avoid the white part). This will infuse the simple syrup with an intense lemony flavor. Boil for about 5 minutes on low heat. Keep an eye on this, don’t let it caramelize. After it boils for 5 minutes, turn off the burner & let it rest for about 10 minutes.
Nuke your Lemons
Slam your lemons on a firm surface and roll it around to break up the membranes inside, freeing up lots of lemon juice. Nuke it in the microwave for about 15 seconds.
Squeeze your lemons into the glass pitcher. A wooden spoon works well for this. Add your simple syrup including the zest, mint, fill with water, stir/mix, chill, enjoy. You may opt to add more sugar if you like it sweeter.

Thanks for this Paul . . . I do have Mint growing just by the kitchen door, so will try this when I've bought the lemons. Good timing, as we're apparently about to have some hot weather!

Enjoy it Sheila. I think you will. We are sweltering here in NY Sheila. I can hear thunder, but no rain! Very strange. I would love a 'cloud burst' about now. Hope it's not as bad for you. Good day for the beach!

Thanks for this Paul , I have mint I make a lemon drink similar but had never 'Nuked ' the lemons Lol .. I will next time :o)

Thanks Paul . . . hot here too (well, 28 degrees, which is a but much for me). Looking forward to a swim tomorrow - so great to at least have a pool nearby. Just sitting around in the shade in the garden . . .

This looks like a quick and very thirst-quenching drink Paul! I make a lime and lemonade using a recipe that I've adapted from our famous Delia Smith! ;o)

That sounds good too Tracey - with limes. Yes it's very thirst quenching. Fresh lemons also cleanse the liver & kidneys.

Yes a very healthy drink...! I'm sure you could adapt your recipe to include Limes too. It makes it really sharp and tangy! With Delia's recipe you leave everything soaking overnight, and then strain it in the morning, before bottling up. ;o) I like it if some of the juicy bits goes into the drink, it gives it a real homemade look! :o)

LOL Diane I meant to put the lemon in the microwave for 15 seconds. It yields much more juice that way.

Isn't that fun, love the presentation. Are sure you shouldn't be a professional photographer? I do that with lemons and limes...makes all the difference. Also like the vivid description of the syrup. Thanks

Thanks Wells, I've realized they syrup gives a much smoother texture then raw sugar, and won't settle to the bottom. So many variations on this. I've done lemon/limeade, lemon/orange, all limeade - all pretty tastey. Also the many health benefits of fresh lime or lemon is a big plus.
