tomato recipes

I made tomato relish using my mum’s recipe which is pretty old, but a gorgeous flavour. For anyone who wants to try it:
Tomato Relish:
3lb tomatoes
2lb onions chopped – not too finely
2lb sugar
1 tspn salt
1 pint vinegar (reserve half a cup)
2 dstspn dried mustard
1 Tbspn curry powder
1 Tbspn dried chopped chillies
2-3 Tbspn flour
Skin tomatoes by cutting a cross in the top and putting in boiling water for 1 minute. Chop and add to preserving pan with onions, vinegar, salt, chillies and sugar.
Stir over a low heat until sugar is dissolved and then cook gently for about an hour until thick. Blend together mustard, curry powder, 2Tbspns flour and reserved vinegar and add to relish mixture. Boil for around 10 minutes and check consistency. If it is still a bit thin mix the remaining flour with a little more vinegar and add to pan and boil again.
Pour into sterilised jars and put lids on when cool.
Enjoy!

Can you tell me how long this will keep for please Janne, as living on my own I would need it to keep for quite a while.

The relish if kept in a dark cupboard will last for a year - at least! Mine doesn't get to last that long as I like it on toast (on its own) with cheese, meat and with chips (fries ... whatever you call them in this country!)

Thanks for sharing your recipe...I will give this a try...tomatoes grown really well this year,grown my favourite variety `gardeners delight` and have not been dissapointed.
