hi all, just thought i would put on my recipe for homemade tom soup for those of us with a glut..mrsparrow..cristina..only serves one..
i used 1lb of tumbling cherry toms & all other ingredients from allotment..

peeled..

tbl spoon veg oil & sweated 1 lge diced onion.1 crushed garlic clove.

1/4 cup of chopped basil..

add one veg stock cube to 1/4 pint water..add all ingredients to pan simmer for 5 mins..
..

put in blender..

sieve to remove seeds then back to pan to simmer for 5 mins and season with salt & pepper..

serve & garnish with young basil leaves and crusty bread .or in my case half a balm cake.. i have to go now..back in a moment..

well that was tasty mm..

forgot to mention you could include..citric acid ,sweetner, dried skimmed milk, cornflour, proteins, sugar, acesulfam potassium in with the ingredients ..but i couldnt be bothered…

This soup looks lovely, especially on this dark, wet August afternoon at 4.45, I'm putting this on to my favourites. Did you save that last piece of bread to mop round the bowl with ... I would have ... lol ! !
