Can anyone help me with a recipe for sweet pickled beetroot as our beetroot is growing fast and we need to start pickling, thank you

We always use equal proportions of white vinegar, sugar and either water or preferrably the liquid from the boiled beetroot.
Use this and you won't be disappointed.
