Leek and potato soup

A tasty chunky winter warmer ....
1 lb leeks , sliced thinly
3/4 lb Potatoes
melt 1oz butter in a saucepan
Sweat the leeks in the butter on a gentle heat until nice and soft ,
Add the potatoes cut into small chunks ,
then enough stock to cover the veg .
I use one of those Knorr chicken stock pots ..
Simmer until the potatoes are cooked ,
Then mash or liquidize depending on how you like it ,
add a cup of milk
Salt and pepper to taste
I double all these ingredients to make a big pan full ,
Also each day afterwards you can add other veg .to make a vegetable soup if you like , a handful of peas etc .

Yes Jacque .. I have a big pan on the cooker at the moment , it's so tasty and you don't need to stick to those quantities you can put in more of one veg. less of another ..
Another thing is that you can control your own salt .. apparently there is more salt in a can of soup than you should have in a week ..
A can of butter beans goes nicely in it after the first day and is very filling for a warm lunch .....

There is more salt in Jamie Olivers pasta sauce than in the sea and the same goes as you said in a week in other pasta sauces, and salt helps retain fat and water in the body.

It's not good for high blood pressure either Morgana , I don't know why they put so much salt in everything when they know it's so bad for you !

I've made this too Amy, looks like pretty much the same recipe, its yummy , lovely with a bit (or a lot) of cream swirled on it, my mouths watering now.

I just went next door to my Mum's and she has a pan of leek and tatty soup(as she calls it) on the hob that she made this morning, so I have the added bonus of being able to smell it and taste it....haha

It looks as though this is a winner everybody's favourite ... except Sandra . never mind Sandra you can change the leeks for another veg. that you do like !
You are lucky Busylizzy having a mum next door to make it for you ,
Hywel buy some nice big leeks the next time you go to the market and then make a big pan full it will last you for several days .. or freeze some for later !

I often substitute the leeks for cabbage, kale, spring greens. As I tend to go to the supermarket after work (9pm) I can usually get "greenery" of some kind or other reduced "for quick sale" at the end of the day. We haven't eaten our homemade soup yet, it's for tomorrow. I always make soup a day ahead, as find that the flavour improves (mind you, will be having a sneaky tasting now and then this evening! :-)

Yummy Amy! Ian often makes this and vegetable soups.....love them. Once a week in winter I make a vegetable Lasagne with all the bits of veg left......:o)

David you are quite right it is better the next day , I don't know how you find the time to do all that you do !!!
Carrots Sandra , carrots mashed into the pots. is lovely , parsnips I think overpower it a bit ... 'cos that depends on how much you like them :o)
The Lasagne sounds good Janey , I think I could eat a lot of things without meat !

We like it better than the meat version Amy...it's so tastey....Ian had 20 years meat free, but succumbed to a bit of crackling....Lol!

Leek and tattie our favourite. For a quick stock I simmer 4-9 chicken drum sticks for 20mins in a pan of water. No salt added. I strain it off and put the drumsticks in the oven with a sprinkling of chinese 5 spice or whatever i have until cooked. The family love them and can be eaten with salad or cooked winter veggies or take meat off the bones and make curry. With the tiniest knob of butter I glaze the leeks and potatoes,addd the stock and season to taste. Hubby had jaundice 40 years ago and I was not allowed to use stock cubes and had to devise a way of using something else. i make carrot and coriander soup with a pound of carrots and I use a pestle and mortar to crush one tablesp of coriander seeds. Liquidise it and strain it through a sieve if you object to the small pieces of seed you might find. Makes a delicious soup. We are very old fashioned I cook on an Esse cooker fired with anthracite built in 1946. It is wonderful. Kettle is always on.

Thats a good tip Madabout ,I never use salt , I let people add their own afterwards , I must admit that I don't use stock cubes unless i'm right out of stock , I usually freeze chicken stock after I have cooked a chicken and then use it for these recipes .
I love carrot and corriander soup , In fact I like all vegetables and could eat veggy soups everyday ..
How nice to have such a wonderful old cooker ! things were made to last when that was made ... I bet your kitchen is always cosy and warm as well .................

Thanks Amy I love this recipe part of the site what a good addition. Every visitor lands in the kitchen because its the heart of the house. I am trying to lose weight and eating home made soup is a tried and tested remedy because it is filling, nutritous and non fattening. Even the tattie soup is slimming. We have thought of having it converted to oil but we get a lot of power cuts so will stick with the coal.

I don't blame you for keeping the coal , at least you will always be warm . We have had a woodburner installed in our sitting room and we love it ........
