This year I have masses of damsons (unlike last year when I had 2). Made some jam, well it's more like jelly, but does anyone have any other ideas for them?

You're so lucky to have a damson tree. I made damson jam years ago, it's my favourite (as Brucie would say!). Don't know what else you could do with it though, maybe some more jam?? I've got an old comprehensive cookery book, I'll have a look and see if there are an ideas. Otherwise 'google'?

Had a look in the book, there is Damson and Apple Jelly, Pickled damsons but it sounds like a real palaver over several days, and Damson wine. Let me know if you want any details

Thanks Lily, Damson and Apple Jelly sounds nice. I picked loads of apples on our walk today, masses around here. Also cherries and blackberries of course.

Personally I use Isabel Webb's "Preserving with a Microwave" for all my chutneys nowadays .....it is so much easier, quicker and cleaner. ..low sugar too!
Head for the library and you will find her books there. She is an Australian writer and all her ideas I find fantastic...have used them for many years.

Just found out that Isabel Webb has brought out a new paperback on 1st of May this year (224 pages ...wow!)

5 minutes sounds good to me. Also I think it will be cheaper in the long run because I have just burned the bottom of a pan trying to make plum jam which didn't set anyway. (That's the plums without the maggots).
Never mind, there must be a hundred things to do with mushy plums.

Hi Ginelle....grab a couple of large onions and two big cooking apples...dice and add to half a cup of vinegar with a teaspoon of allspice and some cloves if you fancy...cook them for about 8 mins. in the microwave to soften. Then add your mushy plums and cook - again on high until they all bubble ....then for a further 5 minutes...and voila - you have chutney!!
Pot it into jars and store in a dark cupboard and use as required. You can fit screw rings and tighten LIGHTLY before microwaving for one minute per jar - then tightening screw completely.
This helps it keep longer...ha ha - never need to in this house!!

Hi again...you got me going with this talk of chutney-making.....and I spent most of yesterday making 10lbs of the stuff! Well it was basically tomato - but it got everything else added ...as usual I am not good at sticking to a recipe....but it sure goes well with cheese..and smoked salmon..and .....!!
