NOT a Christmas pudding (an alternative treat)

I’ve just made the first half of my Chocolate and Raspberry Trifle (a lighter alternative to Christmas pudding) and it is SO easy, so thought I would share it with you.
1) Break up four trifle sponges (bought); lay in base of 6"-8" serving dish. Add 2 tablespoons kirsch to a 300g tin of raspberries, pour over the sponges and squish together; pop into fridge.
2) Melt 4 oz butter, then OFF THE HEAT stir in 3 oz flour and l pint milk. Bring slowly to the boil, stirring, until thickened and smooth. Remove from heat and mix in 1oz sugar, 2 egg yolks and 1 tablespoon kirsch. Divide mixture evenly between two bowls.
3) To one half add 4oz plain chocolate, melted; to the other a few drops of vanilla essence.
4) When cool (but I don’t always wait) spoon the vanilla mixture over the soaked sponges; then the chocolate mixture.
5) Whip half a pint of double cream and spread over the surface; decorate with anything chocolatey.
My family adore this, and insist that I make it whenever we are celebrating . . . any excuse will do!

Sounds heavenly Sheila....just the thing I'm looking for. I decided to skip the Xmas pud too, so trifle is what I'm going to make, haven't any kirsch though, or raspberries...Lol!

Will try your trifle recipe Sheilabub on our visitors due to come after new year. Followed up our meal at the pub yesterday with a trifle in a glass, as I couldn't face more pud. Light and easy to eat. GJ ended up with most of the cream.

I found Kirsch in Tesco at the second try. In a tall thin bottle on the bottom shelf. None to be seen in Sainsbury.

Sounds good to me...I love trifle but not keen on Christmas pud.Too heavy after a big dinner!
I hope you enjoy it. Alas, no good for me.I have to eat wheat,gluten and dairy free!! (a bit of a pain!!) Enjoy!!
