Been doing a bit of baking, singing along to my christmas CD, chestnut stuffing,sausage rolls,mincemeat slices.
Thought I’d put this recipe on for mincemeat slices, got this easy recipe out of a mag years ago, quicker to make than mince pies if you’re in a bit of a rush, my kids have never liked mince pies but they love these especially warm with cream.
4oz marg
6oz SR flour
2oz granulated sugar
6-8oz mincemeat
icing sugar to dredge
Pre-heat oven to gas 4 180c/350f. Grease a 7×9 inch shallow tin (I usually line with greaseproof paper too).
Rub the marge into flour, stir in sugar, then mix in mincemeat, spread mixture in tin and bake for 20-30 min until brown, cut into fingers when cool and dredge with icing sugar, yummy, store in airtight tin if you get the chance.

Did make sausage rolls too but they’ve gone already.

I like the sound of the mincemeat slices Sandra , i'm not a fan of the pies either to much pastry in them .. I sometimes make a big one with a thick layer of cooked apple under the mince meat it's not so dry then .. ..
No eggs in the slices ... I suppose there's enough moisture in the mincemeat ... I will be trying this .. :o)

Yours sounds nice with the apple underneath Amy, will give that a try, have loads of apples from allotment.

Yummy will do those mine slices its alot easier than messing with the tarts.

Looks lovely shall have a go. When I do ordinary mince pies I always put a teaspoon of marscapone cheese over the mincemeat before putting the lids on, makes a nice change.

I've just taken mine out of the oven Sandra .. it looks yummy , I wanted it for tomorrow but I'm not sure it will last that long !!
