SPECIAL APRICOT CAKE - recipe requested by Rose

This is from a book by Mary Berry, ‘Fast Cakes’, published in 1981. Inside cover reads:

Mary Berry of Thames Television’s After Noon Plus programme.

Utterly delicious. A can of apricots is added to this cake and gives it its distinctive flavour. Use the juice from the can in a fruit salad or soak sponge cakes in it for a trifle.

Making time about 15 minutes
Baking time about an hour and a half

4 oz (100g) soft margarine
4 oz (100g) soft light brown sugar
2 large eggs
1/4 teaspoon almond essence
7 oz (200g)S.R. flour
half level teaspoon baking powder
190g can apricot halves, drained and chopped
8 oz (225g) mixed dried fruit

Heat the oven to 325F, 160C, gas mark 3 and grease and line with greased greaseproof paper a 7-inch (17.5cm) cake tin.

Cream the margarine and sugar until light and creamy. Beat in the eggs and almond essence, adding a tablespoon of flour with the last amount of egg. Fold in the flour and baking powder and all the fruit.

Turn into the tin, smooth the top and bake in the oven for an hour and a half or until the cake is golden brown and a skewer pierced in the centre comes out clean.

Cool in the tin for 10 minutes, then turn out, remove the paper, and leave to cool on a wire rack.

Rose – I often use canned sliced peaches (chopped) instead of apricots – tastes just as good.

have also made a note of this cake, my sister is gluten free but likes her cakes and most come out very dry, but the fruit should help keep this one moist, It will make a change from the tangerine one I usually make for her, many thanks Susan

I really rate her, its how I was taught to cook at college, her recipes are tried and tested over so many years, the afternoon tea she cooked with her granddaughter the other daylooked so tempting

I am pleased you will all be trying this recipe ... I was amazed to realise I bought that cook book back in 1981 ... have to confess some of the pages are quite grubby now! I had a slice of the cake last night and have a high blood sugar reading now ... ho hum! :o)

Rose - I have just looked at conversion charts and am so confused now! One site says:

Gas 3 325F 170C 150 Fan oven

another says:

140 Fan oven

Also, my recipe converts:

Gas 3 325F 160C (the C temp is 10 degrees different)

I have only ever cooked with Gas and

I guess there were no fan ovens back in 1981!!!

Thanks for this Shirley,added to faves too..Tinned peaches well liked here,so will try both versions..I put some in an Orange jelly yesterday,as I thought I had a tin of Mandarins left ! but it went down just as well..:o) and I agree..150 electric fan oven..

The cake looks scrummy, Shirley. I am going to make it for this Wednesday when the family come for their weekly meal! It will make a change from the usual brownies, blondies and toffee apple cake that they all love and, perhaps, a bit healthier too :)

Just taken the cake out of the oven, Shirley and it looks and smells delicious. Made a slight error but it seems OK - just turned all the tinned peaches out, drained and chopped them up. Checked recipe, 190g chopped peaches. Now I've looked again and it should be a 190g tin of peaches. I think that may mean I've overloaded the peachiness but I was a little short of the 8oz of dried fruit required so it may balance out. The proof of the pudding..... :)

The family came as planned yesterday and the cake is all gone! It was lovely, great flavour (I used vanilla instead of almond as the family prefer that). I did save a couple of slices as I half expected a friend to visit today. She didn't - so I ate both slices myself. I needed the energy as I was digging and turning turf :)

Ooh ... lots of cake related comments today ... I baked choc chip fairy cakes at the weekend ... but it's so hard to resist them (I'm Diabetic now) ... have learned the hard way how quickly the blood sugar level soars!

I've been making this cake for a while and it's always delicious. Last week made it with dark brown sugar (had no light brown) and threw in a tablespoon of ground almonds (ran out of essence) and a slosh of Cointreau...also topped it with flaked almonds and oh my goodness it was amazing.

Sounds fantastic Moulins! This cake has become a firm favourite in this family . . . the only cake I make nowadays! The recipe has been given to several friends, including a 78 year old widower at the croquet club which is lovely :)

Sheila - I have been Type 2 for a couple of years - just about know now the things that trigger a high blood sugar. Last test result was good so I must be doing something right!
